Ingredients

1.5 lbs Beef sirloin steak

1 loaf of foccacia bread

4 oz Jalapeño cheese

4T Garlic aioli

6T Compound butter

Marinade

2 Fresh rosemary sprigs

2T Minced garlic

1T Grainy mustard

3T Extra virgin olive oil

1T Worcestershire sauce

½ cup Onion (minced)

2T Lemon juice

1t black pepper

Salad

8 oz Spring mix

2T Lemon juice

5T Extra virgin olive oil

¼ Red onion 4T Cilantro leaves

Kosher salt Black pepper

Preparation

mix marinade and pour over steaks in a sealable plastic bag. marinate for 1 hour or over night.

mix salad ingredients and place vovered in cooler

cut foccacia loaf into 4 equal squares then slice in half. coat heel and crown of foccacia with compound butter and set aside.

heat grill to 400 - 450 degrees. remove steaks from marinade and grill 8 minutes turning once for a medium rare. remove and let rest 5 minutes before slicing.

toast foccacia to golden brown then melt jalepeno cheese on the toasted foccacia.

slice steaks thin and layer on bread. top with a good dollup of the garlic aioli and top with salad mixture. drizzle your best olive oil over top and serve
