Ingredients
6 medium red potatoe’s
2 cups shredded sharp cheddar cheese
1/4 cup butter (1/2 cube)
1 cup sour cream
1/3 cup finely chopped green onion
1 teaspoon salt
1/4 teaspoon ground pepper
Top with 2 Talespoon of small cubed butter and paprika
Preparation
Boil potatoes in skin until the flesh is still firm (about 15 minutes). Drain well and cool. Peel aand shred coursely (with a course box grater). In a saucepan over low heat, combine shredded cheese and butter. Stir occasionally untily almost melted. Remove from heat and blend in sour cream, green onions, and seasonings. Add to potatoes and pout into 2 quart greased casserole. Dot with 2 Tablespoons butter and sprinkle with paprika. Bake uncovered in 350 degree oven for about 30 minutes or until it starts to bubble around the edges.
