Ingredients

2 large Vidalia or other sweet onions (I used 4 of our medium white onions)

1 C rice vinegar

1 C water

1/2 C sugar

1 t each: peppercorns, whole cloves and mustard seeds 1/4 t whole allspice

Preparation

Cook onion in boiling water 2 minutes. Drain and plunge into ice water: drain. Place onion in a large glass bowl. (I heated 6 cups of water in micro for 10 minutes – until boiling. Put sliced onions into hot water and microed 1 more minute. Drained and plunged into ice water.

Combined the liguid items and spices and microed on medium high power for 8-10 minutes until bubbling.

Pour the vinegar mixture over the sliced onion. Cool, cover and refrigerate overnight. Yield 9 servings.
