Ingredients
4 Tablespoons olive oil
2 Tablespoons butter
3 cloves garlic, minced
2 small onions, sliced thin
1/2 teaspoon crushed red pepper flakes
Salt and pepper (to taste)
4 boneless, skinless chicken breast halves, cubed
1/2 cup sun-dried tomatoes, sliced
1/4 cup half-and-half
Parmesan cheese
1 lb. cooked fettucine pasta
Preparation
Melt butter and olive oil in a medium sized saute pan over moderate heat. Add sliced onions, garlic, red pepper flakes, salt and pepper. Saute gently til onions are softened but not browned.
Clear space in pan and add the cubed chicken pieces. Saute stil over moderate, gentle heat for about 10 minutes or until chicken is cooked through.
Reduce heat to low, and add the slices of sun-dried tomatoes. Pour in the half-and-half and stir together until sauce is just slightly thickened. Serve over hot cooked fettucine pasta and sprinkle with parmesan cheese.
