Ingredients
olive oil
2 large red onions, thinly sliced
2 large sweet onions, thinly sliced
1/2 tsp. salt
1/2 tsp. fresh ground black pepper
1 tsp. sugar
1 tsp. worcestershire sauce
1/4 cupdry white wine or extra dry vermouth
2 2/3 cups no salt added beef broth
2 cups water
1/4 tsp. dried thyme
croutons
gruyere, comte, or swiss cheese
Preparation
Saute onions in olive oil until tender. Stir in sugar, salt & pepper. Cook 20 minutes. Transfer to crock pot. Stir in remaining ingredients except croutons & cheese. Cover & cook on low 6-8 hours or high 3-4 hours.
Can also be cooked on stove top. Simmer 2-3 hours.
Preheat oven to broil. Ladle soup into oven proof bowls, top with croutons & cheese. Broil till browned.
