2 LARGE ONIONS (RED OR WHITE)

Preparation

ROLL OUT THE PIE CRUST TO FIT A 10" TART PAN. POKE WITH A FORK ALL OVER. BAKE SHELL TILL IT IS JUST UNDER DONE. REMOVE AND CRUMBLE THE BLUE CHEESE OVER THE SHELL AND SPRINKLE WITH CARMELIZED ONION AND BAKE TILL BROWNED, CHEESE AND CRUST. LET COOL AND SERVE OVER A SALAD OF MESCLUN.
