Ingredients

1 14oz package angel flaked coconut

2/3 c sugar

6 T finely ground almonds (raw, unsalted almonds ground 3 minutes with a food processor or prepared almond flour)

1/4 t salt

4 egg whites

1 t almond extract

Preparation

Preheat oven to 325 degrees.

Line a baking sheet with parchment paper. Mix all ingredients together in a large bowl. Form into 1" diameter balls and place on the baking sheet.

Bake for 20-25 minutes or until just barely golden brown at the edges.

Let cool before removing. Store in an airtight container.
