Ingredients

1# canned crab meat (squeeze out excess water)

1 can whole corn (drained)

1 red pepper

1 green pepper or yellow

2 egg

2 T mayo or add more if needed

1 lemon (juiced)

chopped chives

1-1/2 T dijon mustard

Salt and pepper to taste

1 c panko bread crumbs and maybe more.

Oil for cooking.

Preparation

Pre-heat oven to 350 Mix all the ingredients together except for the breadcrumbs in a large bowl. When mixed thoroughly.. portion and roll on to bread crumbs and form a cake with your hands or use a cutter. Before cooking, each cake into the breadcrumbs.

On a hot oiled pan, sear the flat sides of the cake. To finish cooking you can put it in the oven for 5-10 minutes.
