Ingredients

4 large eggs

3 tbsp milk

1/2 tsp salt

1/4 tsp white pepper

3 drops tabasco

Preparation

Mix gently with a fork or whisk.

To prepare, melt 1 1 /2 tbsp of butter over medium heat. When butter begins to sizzle add the batter and spread evenly by tilting the pan in a circular motion. Cook until batter begins to set and omelette begins to brown on the edges. Add filling in a line across the middle of the pan 2 inches wide. When the inner surface of the omelette appears almost dry, fold the edges along the filling from either side so that they overlap about 1 inch. break into two portions and serve.
