Ingredients

3 c. oats

1 c. pepitas

3/4 c. maple syrup

1 c. coconut powder/shreds

1/2 c. olive oil

1/2 c. brown sugar

2 t. salt

cinnamon, cloves, ginger, pepper, whatever spices you like

dried fruit

Preparation

Preheat oven to 300. Mix all of the ingredients minus the fruit in a large bowl. Spread out on parchment-lined baking sheets. Don’t over fill–leave space for clumps to form. Cook 45 mins, stirring every 15, or until oats are toasty brown and syrup is clumpy. Cool, mix in fruit, freeze to store.
