Ingredients

4 1/2 cups milk

3/4 cup rice

1 large egg

1/2 cup sugar

2 tsp vanilla

1/2 tsp salt

cinnamon

Preparation

Warm milk over medium heat. Add rice and cook ’til tender (~20 minutes) stirring frequently. Whisk together egg, sugar, vanilla and salt, Stir in some of rice mixture until blended. Return mixture to pan and stir and cook for 1 minute. Pour into 6 custard cups, sprinkle with cinnamon and refrigerate.
