Ingredients
1/3 cup shortening
1/2 cup sugar
2 eggs
1 cup mashed over-ripe banana (about 2 bananas)
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts (optional)
Preparation
Preheat oven to 350 degrees.
In a mixer, combine the shortening, sugar, eggs and the bananas. In a separate bowl, combine the remaining ingredients except for the walnuts.
Mix the dry mixture into the banana mixture. Fold in walnuts.
Pour batter into a greased 9 1/2 x 5 loaf pan. Bake for 40-45 minutes.
