slices bacon

lb. fresh okra, sliced crosswise

(1-lb.) pkg. frozen whole kernel corn, thawed*

cup chopped red bell pepper

1/4

teaspoon salt

1/8

teaspoon pepper

Preparation

In large nonstick skillet, cook bacon until crisp. Remove bacon from skillet; crumble. Set aside.

Drain all but 1 tablespoon bacon drippings from skillet, or drain off all drippings and add 1/4 cup water to skillet. Add okra; cook over medium heat for 4 to 6 minutes or until crisp-tender, stirring frequently.

Stir in crumbled bacon, corn, bell pepper, salt and pepper; cook until thoroughly heated, stirring occasionally.
