Ingredients

4 cups oatmeal

1/2 cup plus 2 Tbsp butter, melted

1/3 cup light corn syrup

2 tsp vanilla

1 cup brown sugar, packed

1 cup peanut butter (I used crunchy) divided

1 cup semisweet chocolate chips

1 cup salted peanuts, chopped

Preparation

Preheat oven to 375, butter a 9x13 pan.

  1. In large bowl, combine the oatmeal, melted butter, corn syrup, vanilla, brown sugar and 1/4 cup peanut butter.
  2. Mix well, pour into the prepared pan and press into even layer.
  3. Bake 10-12 min.
  4. Meanwhile, melt the chips over very low heat, stirring occasionally,(or in microwave oven)
  5. Stir in remaining 3/4 cup peanut butter and salted peanuts.
  6. Allow baked layer to cool for a few minutes, then pour and spread the choco/peanut butter mixture over and spread.
  7. Put into fridge to set the bottom layer. Keep refrigerated.
