Ingredients

1 cup all purpose flour

2 eggs

1/2 tsp. baking soda

1 tsp. vanilla extract

2tsp. tangerine zest

1/4 tsp. salt

1 cup butter (2 sticks) softened

3/4 brown sugar

1/2 cup granulated sugar

3 cup quick oats

1 cup white chocolate chips

1 cup dried cranberries

Preparation

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, combine flour, baking soda, and salt.
  3. Beat butter and both sugars in a large bowl with electric mixer until creamy. Beat in eggs, vanilla, and tangerine zest, Beat in flour mixture. Stir in oatmeal one cup at a time. Fold in white chocolate chips and cranberries.
  4. Drop batter by heaping teaspoonfuls, 1 inch apart onto ungreased cookie sheets. Bake for 10 minutes (unless you make larger sized cookies) Let cool.
