Ingredients
Cookies
1 1/4 cup flour
1 tsp. baking soda
1/4 tsp. salt
1 cup butter
1 cup brown sugar
1/4 cup hot water
2 cup quick oatmeal
Date Filling
2 cups cut up dates
1/2 cup white sugar
3/4 - 1 cup water
Preparation
Sift flour, baking soda & salt. Cream butter and add sugar slowly. Add dry ingredients alternately with the hot water. Add oatmeal. Form into log. Wrap in floured wax paper and chill overnight. Cut in 1/4 inch slices and bake on greased cookie sheet. Allow cookies to stand a few minutes before removing from pan. Cool. Spread with date filling to make sandwiches.
Cook until dates are mooshy - Cool before spreading on cookie
