Ingredients

1 1/4 cup butter (2 1/2 sticks). Can substitute margarine.

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

1 egg

1 tsp vanilla

1 1/2 cup flour

1 tsp baking soda

1 tsp salt (optional)

1 tsp cinnamon

1/4 tsp nutmeg

3 cups quick or old-fashioned oats

1 1/2 cup raisins

Preparation

  1. Heat oven to 375C
  2. Beat butter and sugar until fluffy
  3. Beat in egg and vanilla
  4. Add combined flour, baking soda, salt, and spices. Mix well.
  5. Stir in oats and riasins
  6. Drop rounded tablespoons onto greased cookie sheet.
  7. Bake 8-9 minutes for chewy cookies. They will be slightly brown on the bottom but white on the top.
  8. Cool for 1 min and remove.
  9. Store tightly covered
