Ingredients
1 1/4 cup butter (2 1/2 sticks). Can substitute margarine.
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp salt (optional)
1 tsp cinnamon
1/4 tsp nutmeg
3 cups quick or old-fashioned oats
1 1/2 cup raisins
Preparation
- Heat oven to 375C
- Beat butter and sugar until fluffy
- Beat in egg and vanilla
- Add combined flour, baking soda, salt, and spices. Mix well.
- Stir in oats and riasins
- Drop rounded tablespoons onto greased cookie sheet.
- Bake 8-9 minutes for chewy cookies. They will be slightly brown on the bottom but white on the top.
- Cool for 1 min and remove.
- Store tightly covered
