Ingredients
1/2 cup white sugar
3/4 cup brown sugar
3/4 cup (1 ½ sticks) butter
2 eggs
1 1/2 teaspoons vanilla
1 1/2 cups All-purpose Flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1-teaspoon cinnamon
2 1/2 cups old fashioned rolled oats
1 1/2 cups raisins
2/3-cup walnuts chopped
Preparation
Preheat oven 300F. Sift flour, baking soda, salt, and cinnamon. Mix in oats.
Cream butter and sugars. Mix well, scrape down the sides. Add eggs one at a time. Add in vanilla.
Mix in flour mixture. DO NOT OVERMIX. Fold in raisins and nuts.
Bake on an ungreased cookie sheet, rounded tablespoonful 1 ½ inches apart, 22-25 minutes or until light golden brown. Remove immediately to a wire rack and cool completely.
