Ingredients
Dry ingredients:
1 cup quick 1 minute oats
1/2 cup white flour
1/2 cup buckwheat flour
2 tablespoons baking powder
2 teaspoons sugar
1/2 teaspoon salt
Wet ingredients:
2 eggs lightly beaten
1 1/2 cups buttermilk
1/4 cup canola oil
Preparation
Combine the dry ingredients in a large mixing bowl.
Combine the wet ingredients in a smaller bowl or in a glass measuring cup and whisk to mix.
Add wet ingredients to the dry and mix gently until thoroughly mixed. Set aside undisturbed for 10 minutes.
Just before ten minutes is up heat your griddle. Pan should be hot enough so that water drops dance and evaporate. Lightly oil the pan with a brush.
Pour circles of batter. Cook a minute or two on each side until nicely browned. Time to cook will depend on the heat. Adjust heat so that pancakes do not cook too quickly.
