Ingredients
Ultimate Oatmeal Double Nut Raisin Cookies
1 cup butter
1 cup sugar
2 jumbo, or extra large eggs
1 tablespoon vanilla
1 cup packed brown sugar
4 cups whole oats
1 ½ cups unbleached flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped walnuts
1 cup chopped pecans
1 cup raisins
Directions:
Cream together the butter, and both sugars. Add the eggs and vanilla. Combine the flour, oats, baking powder, salt and cinnamon in a bowl, and stir until combined. Add this dry mixture to the wet ingredients and mix for one minute. Slowly add both types of nuts, and the raisins. Drop by tablespoonfuls onto a greased cookie sheet, and bake at 350 degrees for 10 minutes, or until golden brown.
