Ingredients
2 sticks of unsalted butter, slightly softened
3/4 cup white sugar
3/4 cup light brown sugar, packed
2 large eggs
1 tsp vanilla
1 1/2 cup flour
1 tsp salt
1 tsp baking soda, packed
1 tsp baking powder, packed
4 TBSP cinnamon
2 cups oats
12 oz bag of nestle chocolate chips
3/4 cup coconut
Preparation
Preheat oven to 350.
Combine flour, salt, baking soda, powder and cinnamon with a fork in a small bowl.
In the bowl of an electric mixer, cream the butter and sugars until well blended. Whisk in the eggs, one at a time. Add the vanilla. Gradually mix in the flour mixture. Once combined, add the remaining ingredients. Roll the dough into 3/4 inch diameter balls. (Dough will be sticky; periodically wipe off or flour hands). Place balls 1 1/2 inches apart on cookie sheet. Bake one sheet at a time on the middle rack for 9 minutes; cookies should be lightly browned on the edges and wet-looking on the top. Cool on the sheet for 5 minutes (do not keep cooling sheets on the top of the stove!), and then remove cookies and completely cool on a rack.
