Ingredients
1 cup shortening
1 cup lightly packed brown sugar
1/4 cup boiling water
1 teaspoon baking soda
1 teaspoon vanilla
1 1/3 cups flour
1/2 teaspoon salt
2 cups oatmeal
1/2 cup coconut
1 cup chocolate chips
Preparation
Cream shortening and sugar. Dissolve baking soda in boiling water and pour into creamed mixture. Mix in vanilla. In a separate bowl sift flour and salt together and add oatmeal and coconut. Gradually add dry and creamed mixtures together. Dough may be stiff. Mix in chocolate chips. Shap into balls and flatten on ungreased cookie sheet. Bake in a 350 degree oven for 12 - 15 minutes.
