Ingredients
1/2 cup butter
1 over-ripe banana
1/2 cup ‘granulated’ brown sugar
1/2 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups rolled oats
4 oz chocolate bar (broken into pieces)
1 teaspoon vanilla (optional)
1 teaspoon cinnamon (optional)
Preparation
- Preheat oven to 350 degrees F (180 degrees C).
- In a large bowl cream butter, banana, brown sugar and granulated sugar. Add eggs (and optional vanilla) and mix thoroughly.
- Combine the baking soda, salt, (optional cinnamon) and flour and stir into creamed mixture
- Add oatmeal and chocolate and stir until well blended.
- Drop by tablespoonful onto greased cookie sheet. Bake for 15 minutes.
- Allow to cool ten minutes before serving.
