Ingredients

1/2 cup butter

1 over-ripe banana

1/2 cup ‘granulated’ brown sugar

1/2 cup white sugar

2 eggs

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 1/2 cups rolled oats

4 oz chocolate bar (broken into pieces)

1 teaspoon vanilla (optional)

1 teaspoon cinnamon (optional)

Preparation

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. In a large bowl cream butter, banana, brown sugar and granulated sugar. Add eggs (and optional vanilla) and mix thoroughly.
  3. Combine the baking soda, salt, (optional cinnamon) and flour and stir into creamed mixture
  4. Add oatmeal and chocolate and stir until well blended.
  5. Drop by tablespoonful onto greased cookie sheet. Bake for 15 minutes.
  6. Allow to cool ten minutes before serving.
