Ingredients
1 egg
1 tsp baking powder
1 tsp vanilla
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp cloves
1 cup finely shredded carrots
2 cups rolled oats
1/2 cup raisins
1/2 cup sugar
3/4 cup margarine or butter
3/4 cup brown sugar
1 3/4 cup flour
Preparation
Preheat 375*
Mix margarine with electric mixer on medium for 30 seconds.
Add 1/2 flour, brown sugar, egg, baking powder, cinnamon, baking soda, cloves and vanilla.
Beat till thoroughly combined. Scrape sides and stir in rest of flour. Stir in oats, carrots, and raisins.
Drop dough with teaspoon 2 inches apart on ungreased cookie sheet.
Bake 375* for 10 to 12 minutes
