Ingredients
For Cake:
1 1/2 cup boiling water
1/2 cup butter
1 cup quick oatmeal
1 cup sugar
1 1/2 cup flour
1 teaspoon cinnamon
1 teaspoon nutmeg
2 eggs
1 cup brown sugar
1/2 teaspoon baking power
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
For Topping:
6 tablespoons butter
1/4 cup milk
1 cup brown sugar
1 cup coconut
1 cup pecans (chopped)
1/2 teaspoon vanilla
Preparation
Pour boiling water on to the butter and quick oatmeal. Let stand for 20 minutes.
Stir all together and bake at 325 for 35 minutes in a 9X13, greased and floured pan.
For Topping: Over medium head, in sauce pan, mix all topping ingredients together, until well mixed and a very slow bubble. Spread on hot cake and place under the broiler for five minutes or until light brown.
