Ingredients

CAKE

1 c rolled oats

1&1/4 c flour

1 c white sugar

1 c brown sugar

1/2c shortening OR 1/3 c olive or canola oil

1 T cinnamon

2 eggs

2 t soda

1/2 t salt

1& 1/2 c hot water

TOPPING

6 T butter

1/4 c milk or cream

1/2 c brown sugar

1/2 c fresh coconut flakes

Preparation

Mix together in bowl all cake ingredients except hot water. Add hot water. Beat thoroughly. Don’t worry–the batter will be soupy! Pour into greased 13 x 9 pan. Bake 30-35 min @ 350 degrees.

Cook all topping ingredients except coconut over medium heat to caramel texture and color. Sprinkle coconut flakes on top of HOT cake. Pour caramel topping over HOT cake.
