Ingredients
1¼ cups boiling water
1 cup rolled oats
1 cup brown sugar
½ cup canola oil
1 cup granulated white sugar
2 eggs
1 tsp. vanilla extract
Powdered sugar
1¼ cups white flour + 2 tsp. white flour
1 tbsp. baking powder
½ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
Preparation
Mix boiling water, oats and brown sugar in a mixing bowl and let stand for 5-10 minutes
Cream oil, white sugar, eggs and vanilla using a mixer in another bowl
Mix flour, baking powder, salt, cinnamon and nutmeg.
Mix the above three sets of ingredients in a large mixing bowl until reasonably smooth.
Preheat oven to 350 degrees fahrenheit.
Grease a 9"x13" baking dish.
Pour batter into baking dish and bake for 25-30 minutes.
When done, sprinkle with powdered sugar and let cool.
Cut into desired serving size.
