Ingredients
1 -1/4 cups of boiling water
1 cup of quick cook oats
1/2 cup of shortening
1 cup of lt. brown sugar
1 cup of granulated sugar
2 eggs (beaten)
1-1/2 cups of sifted flour
1 tsp.of cinnamon
1/2 tsp.of baking powder
1 tsp.of baking soda
1/2 tsp.of salt
I cup of nuts
1 stick of butter
1 cup of brown sugar
1 tsp.of vanilla
1 cup of coconut
1 cup of evaporated milk
Preparation
Combine and let stand for 20 minutes.: 1-1/4 cups of boiling water 1 cup of quick cook oats.
Cream Together: 1/2 cup of shortening 1 cup of light brown sugar 1 cup of granulated sugar 2 eggs (beaten)
Add oats mixture from top and mix well.
Sift together and add to above mixture: 1-1/2 cups of sifted flour 1 tsp. of cinnamon 1 tsp. of baking soda 1/2 tsp. of baking powder 1/2 tsp. of salt 1 cup of nuts
Bake at 350 degrees for 30-35 minutes in greased and floured baking dish. Put topping on warm dish.
Topping: 1 stick of butter 1 cup of brown sugar 1 tsp. of vanilla 1/2 cup of evaporated milk 1 cup of coconut
Put under broiler until light brown and bubbly. (3-4 minutes)
