Ingredients
1 cup all-purpose flour
1 1/4 cups rolled oats
1/2 cup packed light-brown sugar
1/2 cup butter, softened
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup jam
1/4 cup almonds, finely chopped
Preparation
Preheat oven to 350 degrees F. Grease an 8-inch square pan and line with foil. Combine flour, brown sugar, baking soda, cinnamon and 1 cup of oats. Mix in butter with your hands or an electric mixer at low speed (the mixture will be crumbly). Press 2 cups of the mixture into the pan and spread on jam, leaving a 1/4 inch border. Mix the remaining 1/4 cup of oats and almonds into the rest of the butter mixture. Sprinkle the mixture on top of the jam, press lightly. Bake for 35 to 40 minutes or until lightly browned. Cool before cutting into bars.
