Ingredients

1 1/4 cups applesauce

1 cup old-fashioned oats

1/2 cup butter or margarine, softened

1 cup sugar

1 teaspoon vanilla

2 eggs

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon fresh ground nutmeg

3/4 cup flaked coconut

1/2 cup packed brown sugar

1/4 cup butter, melted

3 Tablespoons milk

Preparation

Heat applesauce in a one-quart saucepan over medium-high heat until boiling. Stir in oats and let stand 20 minutes. Preheat oven to 350 degrees F. Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, salt, cinnamon and nutmeg; until just combined. Pour into a greased 9x9-inch square pan and bake 40-50 minutes or until toothpick inserted in the center comes out clean. Remove from oven and turn oven to broil. Meanwhile, mix together the coconut, brown sugar, butter and milk. Spread mixture over the hot cake and place cake back in the over and broil, six inches from the heat for 1-2 minutes or until top is golden and bubbly. Cool slightly and serve warm.
