Ingredients

1 cup rolled oats

1 cup whole milk cottage cheese

4 egg whites

2 tsp vanilla

1 tsp cinnamon

1/4 tsp baking powder

2 tsp maple syrup, honey, applesauce, or 1 mashed banana (to sweeten naturally)

Preparation

Combine oats and cottage cheese in a medium bowl, cover, and let sit overnight. In the morning (or after 7-12 hours if you love pancakes for any meal), place all ingredients in a blender and blend thoroughly until the batter is smooth and creamy. Pour into oiled skillet (use about 1/4 cup batter for each cake) and cook, about 2 minutes. Flip when the batter starts to bubble and cook until golden brown, about 2 more minutes. Add dried coconut, raisins, chocolate pieces, sliced bananas, or nuts for an extra treat!
