Ingredients
1 Boneless Chicken Breast
1/2 Cup Ricotta cheese
1/2 Creamy Peanut Butter
2 cloves of garlic (minced)
1 serano pepper (diced)
1 teaspoon chili powder
1 cup olive oil
1/2 cup frozen peas
1/2 cup chopped yellow onion
1/2 cup chopped red pepper
1 lb penne paste
Preparation
Chopped chicken breast into 1 inche cubes and marinate in 1/4 cup of olive oil, 1 chopped clove of garlic for 1 hour.
Saute onions, red pepper, serano pepper, one clove of minced garlic and frozen peas in 1/4 cup of olive oil for 10 minutes. Add in chicken and saute for 10-15 minutes.
Combine peanut butter, cheese and chili powder. Heat 1/2 cup of olive oil and slowly add to mixture. When smooth, add to chicken and vegetables and simmer.
Cook penne pasta. Drain and add chicken and vegetables.
