Ingredients

1 banana or 2 7 oz. pkgs of banana baby food

1 c. butter

1 c. honey

2/3 c. brown sugar (omit if using sweetened coconut)

2 tsp vanilla

1 c. wheat flour

1 tsp baking powder

1 c. chopped dried pineapple

1 c. shredded coconut (unsweetened)

1 1/2 c. sunflower seeds

1 1/2 c. cranberries

1/2 c. flax seed

3 c. old fashioned oats

2 1/2 c. rice crispies

2/3 c. whey protein

Preparation

Preheat oven to 325.

Cream together banana, butter, and honey. Add brown sugar, and vanilla & cream until mixture is smooth. Add wheat flour, baking soda, and whey protein. Remove bowl from mixer & stir in remaining ingredients by hand.

Spray jelly roll pan lightly with cooking spray. Spread granola mixture evenly in pan. Bake 15 minutes. Use spatula to press bars down, removing air to condense. Bake another 10-15 minutes (on convection if necessary). Remove from oven & allow to cool at least 10 minutes before cutting into bars. Makes 24 bars.
