Ingredients
3 cups cooked rice.
1 1/2 teaspoons Caldo de Tomate, chicken flavored.
2 stalks of celery, chopped.
5 roma tomatoes, chopped.
1 white onion, diced.
1/2 cup peas.
1 cup of baby carrots, chopped.
1 pound spicy sausage, ground.
1 cup shrimp, chopped.
1 1/2 cups mushrooms.
About a half stick of butter.
Salt and pepper to taste.
Preparation
Sauté vegetables in butter, on medium heat, leaving one tomato diced, but unsauted. Add shrimp when vegetables are partially sauted. When everything is soft and slightly brown, remove from heat. Fry up sausage in a separate pan. When meat is cooked through add to vegetable / shrimp mixture. Add Caldo de Tomate to cooked rice while still hot. Add uncooked tomato to rice. Fold all ingredients together and serve.
