Ingredients

2 cans Italian style seasoned stewed tomatoes

1 quart or equivalent canned, crushed tomatoes

3 leeks, white and tender green

2 cloves chopped garlic

fresh basil leaves, chopped

salt & pepper

2 T olive oil

1 can chicken stock

1 cup heavy cream

Sour Cream for garnish

Preparation

thinly slice leaks Saute in olive oil with garlic until tender Add tomatoes and cook over medium heat, stirring frequently, until they soften Take about 2/3 of tomato-leek mixture and process in food processor, then return to pot Add chicken stock, fresh basil, salt & pepper Return to medium high heat and cook stiring, until it begins to reduce. Lower heat, stir in cream. Simmer until heated through

Serve with a dollop of Sour Cream. Serves 6 - 8
