Ingredients
10oz of frozen spinach (you can use fresh too) I find it easier to work with frozen spinach in a bag rather than the box
2 garlic cloves
1tbsp each: butter and olive oil
pinch of sugar
splash of lemon or lime juice
5oz of cheese (I’ve tried this with mozzarella, swiss, cheddar, monterey - it all works)
1 egg
1-2 oz of bacon, prosciutto or pancetta
1 tbsp of heavy cream, half and half or sour cream
1-1.5lb of chicken (I usually use thighs, but I’ve made this with breasts and tenders before)
Preparation
I salt and pepper the chicken and cook it in butter and olive oil until cooked through. While the chicken is cooking, I boil about half a cup of water in a sauce pan and add the frozen spinach to it, cover and stir occasionally. To make the cheese sauce, I combine chopper bacon with cheese, egg, and cream. When the spinach is just thawed, I add minced garlic, sugar and lemon juice and stir to combine. Then I transfer the spinach to 8X8 in baking dish, arrange the cooked chicken on top, and cover the chicken pieces with the cheese sauce. Broil just until the cheese is melted and is starting to brown.
