Ingredients
2 tbsp oil
1 tsp cayenne
5 green onions cut into lengths, 2 sliced
1 tsp ground corriander

juice of 1 lemon
4 boneless chicken breast
3 cloves of garlic chopped
3 slices of ginger chopped
1 cup chopped peanuts
1 can chicken stock
handful of fresh corriander
Preparation
Heat oil, fry chicken and cayenne. Add garlic, onion, ginger and peanuts. Sprinkle with corriander and salt and pepper. Pour in stock and lemon juice. Cover 3 mins, serve with sliced green onion garnish and fresh corriander
