Ingredients

3 garlic cloves

3 c fresh basil leaves

3 T fresh grated Parmesan

3 T fresh grated Pecorino cheese

1/2 c extra virgin olive oil

1.5 lb linguini

Preparation

Pound garlic and basil until well integrated. Add cheese and pound till well incorporated. Gradually add oil while continuing to pound. This should give a paste that is thick yet somewhat runny. Taste and add salt. Cook pasta till al dente, drain, toss with sauce and serve.
