2 CANS WHOLE KERNAL CORN 16 OZ DRAINED

1 MED. SIZE JAR OF SALSA

1 1/2 CUPS CHEDDAR OR MONTERY JACK CHEESE (SHREDDED)

4 CUPS PREPARED RICE (WHITE OR BROWN)

OPTIONAL: FRESH CILANTRO, SLICED BLACK OLIVES, SOUR CREAM

Preparation

CUT CHICKEN BREASTS IN 1/2 IF NEEDED AND TENDERIZE BY POUNDING A LITTLE WITH A WOODEN MALLET OR SIMILAR KITCHEN INSTRUMENT PLACE IN 9" X 13" BAKING DISH COMBINE BEANS, CORN AND SALSA IN MED. BOWL THEN POUR OVER THE CHICKEN BAKE 350 DEGREES FOR 40 MINUTES - REMOVE FROM OVEN TOP WITH THE SHREDDED CHEESE AND RETURN TO THE OVEN FOR APPROX. 10 MINUTES. WHEN CHEESE HAS MELTED REMOVE AND SERVE WITH CILANTRO, BLACK OLIVES, SOUR CREAM OR ANY OTHER OF YOUR FAVORITE SOUTHWESTERN INGREDIENTS - SERVE OVER RICE AND ENJOY.
