Ingredients

2 packages frozen chopped spinach

3 lg eggs

3 Tbsp. vegetable oil

1 c. small curd cottage cheese

3/4 c. Parmesan cheese

1/2 c. matzoh meal

1/2-1 tsp. salt

Preparation

  1. Pre-heat the oven to 350 F
  2. De-frost the spinach and squeeze out all excess liquid with a clean towel
  3. In a large mixing bowl combine all of the ingredients until thoroughly mixed.
  4. In a greased casserole dish, spread the mixture evenly(should be about 1 inch deep) and bake @350 for 30-45 minutes. (It should be slightly browned)

*this recipe freezes great! I usually cut into serving sized portions, wrap in plastic wrap, and stick in the freezer. My family enjoys this dish at all meals!
