Ingredients
Crust
1/3 box graham crackers (one wrapped segment)
5 tbsp. butter (melted)
1/3 cup sugar
Filling
3 egg yolks
1 1/2 tbsp. lime zest
1 14 oz. can sweetened condensed milk
2/3 cup freshly squeezed key lime juice (about 25 key limes or 6-7 regular limes)
Preparation
Crust
- Preheat oven to 350.
- Butter 9" pie pan.
- Break up crackers to crumbs. Add melted butter and sugar and pulse until combined.
- Press into bottom and sides of pan, bake until set (approx. 8 minutes).
Filling
- Beat egg yolks and lime zest until very fluffy (5 minutes).
- Gradually add condensed milk and continue to beat.
- Add lime juice slowly, mixing just until combined.
- Pour mixture into crust and bake 10 minutes.
