Ingredients

Crust

1/3 box graham crackers (one wrapped segment)

5 tbsp. butter (melted)

1/3 cup sugar

Filling

3 egg yolks

1 1/2 tbsp. lime zest

1 14 oz. can sweetened condensed milk

2/3 cup freshly squeezed key lime juice (about 25 key limes or 6-7 regular limes)

Preparation

Crust

  1. Preheat oven to 350.
  2. Butter 9" pie pan.
  3. Break up crackers to crumbs. Add melted butter and sugar and pulse until combined.
  4. Press into bottom and sides of pan, bake until set (approx. 8 minutes).

Filling

  1. Beat egg yolks and lime zest until very fluffy (5 minutes).
  2. Gradually add condensed milk and continue to beat.
  3. Add lime juice slowly, mixing just until combined.
  4. Pour mixture into crust and bake 10 minutes.
