Ingredients

1-cup finely diced Red Onion

2-Jalapeno Peppers with or without seeds and ribs diced.

3-tablespoon lime juice

1-tablespoon sugar

salt to taste.

8-Roma tomato’s

1-tablespoon bread crumbs (optional)

1-15 oz can tomato juice 1-can Tomato Soup

1/2 cup chopped cilantro

Preparation

Chop the onion and peppers. Place them in a bowl, add the salt,sugar and lime juice. Let this set. Then chop the tomato’s. You will want to keep the seeds and the gelatin mixture with this. That is where much of the tomato flavor comes from. If you feel there is too much liquid just add the bread crumbs. Add the tomato’s to the onion mixture. Add the tomato juice and Tomato Soup, stir well. Just before serving add the cilantro. Keep up to 3 days in refrigerator.
