Ingredients
2 Large Eggplants
1/2 C Whipping Cream
2 1/2 C Marinara Sauce (1 Jar)
2 C Shredded Mozzarella
Olive Oil
1 C Grated Parmesan
3 C Bread Crumbs
1/2 C Flour
3 Eggs
Preparation
Wash eggplant and slice nito 1/2 inch slices. Lightly salt eggplant to remove bitterness and let sit for 20 minutes. Combine breadcrumbs and flour in a wide bowl. Beat the eggs and cream together. Towel dry the eggplant. Dip eggplant into eggs followed by the breadcrumbs. Heat the oil in a skillet until it begins to smoke. Saute the eggplant until golden brown. Drain on paper towel. Place fried eggplant into baking dish and spread half of the sauce over eggplant. Top with half of the mozzarella. Sprinkle with half of the Parmesan. Repeat the process. Bake at 350 degrees for 20-25 minutes.
