Ingredients

50 g cocoa

125 ml boiling water

150 g almonds

1/2 tsp baking soda

salt

200 g berry sugar

150 ml light olive oil

3 eggs

Preparation

  1. Add the 3 eggs to the sugar and oil and whisk until like voluminous mayonnaise.
  2. Whisk together the cocoa and water in a small bowl.
  3. Mix together the almonds and baking soda in a medium bowl.
  4. Add the cocoa mixture and the almond mixture to the egg mixture and stir in.
  5. Pour into a greased lined round flan type tim and bake for 45 mins at 170C.
  6. Should be squidgy when you take it out of the oven.
