Ingredients

Graham cracker crumb recipe

2 eight ounce pkg cream cheese

1/2 cup sugar

1/8 tsp Cinnamon

1 tsp vanilla

1 tsp grated lemon rind

1 Tbsp lemon juice

2 eggs separated

Topping

1 cup sour cream

1 Tbsp sugar

1 tsp vanilla

Preparation

Prepare graham cracker crust in spring form pan or use premade crusts

Blend softended cheese and sugar in mixer Add cinnamon, vanilla, lemon rind, and juice mixing well Add egg yolks one at a time beating well

Beat egg whites till stiff

Fold beaten egg whites into mixture

Pour into crust

Bake 300 for 45 minutes

Blend sour cream, 1 Tbsp sugar an 1 tsp vanilla together. Spread over top of cheesecake. Bake another 10 minutes

Cool by leaving oven door open

Do not be surprised if the top cracks.
