Ingredients
Crust
12 whole graham crackers
6 tablespoons butter, melted
dash of cinnamon
Filling
8 ounces cream cheese
1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
Preparation
Using a food processor, grind the crackers until they are fine. Stir in the cinnamon and add the melted butter. Mix with your hands until combined. Press into a greased pie plate so that it is even and covers the sides of the plate. Refrigerate for 10 minutes before baking at 350 degrees for 7 minutes.
Using your mixer, beat the cream cheese until smooth. Gradually add the sweetened condensed milk and mix until well combined. Add the lemon juice and vanilla.
Fill the cooled crust with the filling and chill the pie for at least three hours. Top with canned cherry pie filling or your fruit of choice.
