Ingredients

3 pds new potatoes

1 bunch green onions, chopped

1 cup celery chopped

1 tsp basil

1/4 cup parsley

3 boiled eggs, chopped

Dressing

1/2 tsp salt

1/4 tsp pepper

1 tablespoon dijon

2 cloves minced garlic

3 tablespoons red wine vinegar

1/2 cup mayo

1/2 cup vegetable or salad oil

Preparation

Boil potatoes and drain do not peel cut potatoes into fourths toss potatoes with dressing combine other ingredients toss and adjust seasonings.

For dressing combine all ingredients, blend well, refrigerate.
