Ingredients

lb. new red potatoes, quartered

1/2

lb. fresh green beans, cut into 2-inch pieces (2 cups)

tablespoons finely chopped red onion

1/2

teaspoon sugar

1/2

teaspoon salt

1 1/2

teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves

garlic clove, minced

tablespoons white wine vinegar

teaspoons extra-virgin olive oil

oz. (1/4 cup) crumbled feta cheese

Preparation

In large saucepan or Dutch oven, combine potatoes, green beans and 2 cups water; bring to a boil. Reduce heat to medium; cook 10 to 12 minutes or until tender. Drain; rinse with cold water to cool. Drain well.

Meanwhile, in small bowl, combine all remaining ingredients except feta cheese; mix well.

Just before serving, place potatoes and green beans in serving bowl. Add vinegar mixture; toss gently to coat. Sprinkle with cheese.
