Ingredients
1 head romaine lettuce or favorite greens.
1 medium red onion, finely diced
3 tomatillos
1 bag frozen peas
1 large ripe tomato, diced and seeded
12 oz fresh grated Parmesan cheese
6 oz low fat Mayo
3 garlic cloves
Salt and pepper to taste
Preparation
Thoroughly wash and dry greens. Peel and wash tomatillos. Puree in food processor, or blender, with garlic cloves. Mix mayo with tomatillos mixture add salt and pepper. (I like a lot of pepper in mine.)
Start with a beautiful glass bowl. Rip greens into bite sized pieces. Make that your first layer next add onions then frozen peas. Make sure mayo mixture is thick before you make this your next layer. Take mixture to the edge of the bowl. Top with tomatoes. Cover with plastic wrap and place in refrigerator for at least three hours. Peas must thaw! Make sure everyone sees salad before you toss.
