Ingredients
3 Med-large sweet potatoes
1 can chopped stewed tomatoes
4 Tbsp. real butter
1 tsp(or less) sugar (or tevia substitute)
Preparation
Microwave the sweet potatoes, depending on size, 10 - 14 min. Scoop out the potato and put into caserole dish. Add the butter, stewed tomatoes and sugar. Mash up but don’t “blend”. Put back in the microwave until the butter is melted, 4 or 5 min. - and then stir up the ingredients, without mashing them.
